Halawa Cooking Machine is engineered with a robust industrial-grade dual-tank structure. It is mounted on a heavy-duty steel platform. This ensures high mechanical stability, structural rigidity, and long-term durability in continuous production environments.
The system consists of two main units: Boiling Tank and Whisking Tank. The Boiling Tank is used for sugar syrup preparation while Whisking Tank is designed for controlled aeration and final halawa fiber formation.
Both tanks are connected by a hygienic transfer pipeline system. It includes a precision control valve. This allows controlled discharge, stable flow transition, and contamination-free transfer between stages.
Each tank is equipped with high-efficiency mixing blades. These ensure uniform heat distribution, consistent homogenization, and stable process conditions during operation. The system also includes ventilation and vapor extraction units. These provide controlled aeration and moisture regulation.
For heating, both tanks use high-efficiency round gas burner systems. These are installed under the platform. They provide uniform direct heating, efficient energy transfer, and stable temperature control.
As an option, the machine can be built with a double-jacket heating system. It can be connected to a steam boiler. This enables indirect steam heating. It improves thermal accuracy, product consistency, and reduces overheating risk.
The design includes control windows, inspection doors, and suction ventilation outlets. These support process monitoring and vapor control. A synchronized valve system ensures smooth operation between stages.
A service platform and operator staircase are included. They provide safe access, easy maintenance, and simple cleaning.

Operational Manner:

3. High-Performance Whisking & Aeration: In the second stage, the mixture undergoes powerful aeration and mixing, creating the signature light, fluffy halawa structure with a uniform white appearance.

Halawa Production Process:
The halwa production process begins with adding a controlled quantity of water according to the batch requirement. After that, sugar is loaded into the Boiling Tank, and the cooking process starts. In this stage, sugar is heated and cooked under controlled conditions to achieve the required syrup concentration and process consistency for halawa production.
Once the syrup reaches the desired cooking level, it is transferred to the Whisking Tank. In this stage, soapwort liquid extract is added to the cooked syrup. The mixture then undergoes controlled mixing and aeration, forming a soapwort meringue, which creates the characteristic fibrous halawa structure with a uniform white appearance.
The produced soapwort meringue batch is then transferred in a single portion to the halawa kneader machine. In this stage, an equal quantity of tahini is added. The kneader performs continuous mixing of both components, ensuring uniform integration and development of the final halawa texture. This process results in a consistent, smooth, and elastic halawa (helva) product, formed through controlled blending of the two main phases.
